[A] LOW COST NUTRITIOUS RECIPE FOR CHILDREN AND MOTHERS

  1. Mixed vegetable Khichri

    Ingredients:

    • Rice - 40g
    • Masur dal - 20g
    • Carrot, Cauliflower, Pumpkin - 5g each
    • Onion/Ginger Paste - 5g
    • Patotoes - 20g
    • Oil - 7g
    • Salt, Turmaric, Zeera - As per taste
    • Water - 70ml

    Variation:

    • Masur Dal can be substituted with any locally available cost pulse
    • Vegetable can also be substituted with any locally available low cost vegetable like peas, carrots, beans, evergreen leafy vegetable.
  2. Cruncy Pulao

    Ingredients:

    • Rice, boiled - 40g
    • Roasted Peanuts - 15g
    • Coconut fresh - 15g each
    • Onion - 5g
    • Potato - 10g
    • Cauliflower + Cauliflower green - 25g
    • Oil - 5g
    • Mustard, Salt, Turmeric - As per taste

    Variation:

    • Cauliflower greens can be subatituted with any seasonal cheap green leafy vegetable like spinach, fengufreek leaves, bathua green etc. Coriander leaves can be used for the preparation of the entire recipe.
    • Rice can be substituted with rice flakes in regions where the cost is low.
    • 15g peanuts and 10g coconut can also be substituted for soya chunks in regions where soya is not available.
  3. Rice-Patoto Tikki

    Ingredients:

    • Potato - 60g
    • Rice powder - 25g
    • Soya granules - 20g
    • Mustard Green / Bathua Greens - 25g each
    • Oil - 10g
    • Salt, Zeera - As per taste

    Nutrition value:

    Variation:

    • Soya granules can be substituted by any lentils /cheaper dals like masur dal etc.
    • Coriander greens can also be substituted with any locally available low cost green leafy Vegetable.
  4. Meetha chawal

    Ingredients:

    • Rice - 30g
    • Channa dal - 20g
    • Peanuts - 5g each
    • Jaggery - 20g
    • Oil - 5g

    Variation:

    • 5g coconut can also be added to the recipe
    • Channa dal can also be substituted with any other locally available low cost pulse
  5. Rice Pura

    Ingredients:

    • Rice - 40g
    • Channa Dal - 25g
    • Jaggery - 20g
    • Oil - 5g
    • Water must be needed
